Cookies, cookies and more cookies. That’s what’s on the menu at Penny and Pearl’s Bakeshop. The Fairfax Avenue Bakery in St. Matthews specializes in cookies, sandwich cookies, cookie bars and custom cookie cakes made to order. The storefront opened in late October 2021 after owners Natalie Zant and Amanda Quiles cooked in their homes and sold online for over a year. The duo worked in a Wild Eggs which temporarily closed during the pandemic. Quiles said they had always wanted to open their own store, so they took advantage of the new weather to put the plans in motion. Zant said their # 1 seller is the chocolate chip cookie topped with sea salt. Other cookies include the birthday cake, brown butter snickerdoodle, creme brulee, cup of peanut butter, and brookie cookie. . But they don’t stop there. Zant and Quiles take two cookies and some homemade frosting and make a “sammie”. Some of the rotating flavors include cookies and cream sammie, strawberry sammie, and chocolate chip sammies.
