For the first time in Dubrovnik, the “Bavarin” street food festival will be held from October 13 to 16 in the historic setting of the Lazaretto.
Next week’s street food festival in southern Dalmatia will feature dishes from Croatia’s top local chefs and restaurants.
One such top professional chef who will be at Bavarin is acclaimed pastry chef Tea Mamut and she shared one of her recipes ahead of the festival.
ALMOND AND CAROB CAKE by Tea Mamut
(for diameter 26cm)
200g chocolate 55%
225g of butter
1 orange zest
2g of salt
75g roasted ground almonds
75g ground carob
150 g) sugar
Steam the chocolate, butter, orange zest and salt
In another bowl, sift the cocoa, add the carob and the almonds
Add the egg yolks to the melted chocolate and butter (make sure it’s not too hot!)
Mix the sugar with the egg whites
Add the dry ingredients to the chocolate and stir in the “snow” (mixed egg whites and sugar)
Bake for about half an hour at 180°C or until a toothpick comes out dry (a few crumbs may remain as the cake is flourless and quite moist)
The official opening of the festival is October 13 at 6 p.m., and all additional information can be found on Bavarin’s social networks – instagram and Facebookas well as on social media and official site from the Dubrovnik Tourist Office.
Admission is free for all visitors.
