Combine your rolled oats, flour, baking powder and spices in a baking dish.

Then add the grated carrots, vegetable milk, vegan yogurt, maple syrup, vanilla extract and lemon juice and mix well.

Sprinkle over crushed walnuts for a little extra crunch, then bake for 50 minutes at 375 degrees Fahrenheit.
