You’ve seen it, you know it, you’ve been puzzled – the viral “is it piece of cake” videos where almost anything can be a seemingly normal object, then with the edge of a knife viewers discover it’s is, in fact, cake. celebrity pastry chef, Yolande Gappbeen creating mystifying cakes like this for years.

With more than 4.5 million Youtube subscribers and 2.7 million instagram followers, the star of How To Cake It, is completely self-taught with over twenty years of experience. You may have spotted her on shows like Netflix’s Nailed It, Best Baker in America, Cake Wars, and Crime Scene Kitchen baking, making, and judging some of the craziest cakes. But although she’s known for her amazing creations and super intricate cakes, she’s always dreamed of publishing a book with her layer cake recipes. Sure, Gampp may be known for its fondant-covered cakes, but every great baker knows that the best cake not only looks beautiful, it tastes delicious too.

How to make a cake

Lime tart

Makes 1 round pie (8 inches)

Ingredients:

  • 1 1⁄2 cup caramel cookie crumbs
  • 2 tablespoons granulated sugar
  • 1⁄3 cup (2⁄3 stick) unsalted butter, melted
  • 1 can (300 ml) sweetened condensed milk
  • 1⁄3 cup fresh lime juice (3-4 limes)
  • 2 large egg yolks
  • 2 tablespoons lime zest (from about 4 limes)
  • 1 teaspoon unflavored gelatin
  • 3⁄4 cup heavy whipped cream
  • 1⁄4 cup icing sugar

Directions:

  1. Preheat your oven to 350°F.
  2. Prepare the crust: Combine breadcrumbs and sugar in a small bowl. Add the melted butter and mix until all the crumbs are coated.
  3. Set aside 1⁄4 cup of the cookie crumb mixture (you’ll use this to decorate your key lime pie cake – more on that later).
  4. Press remaining mixture down sides and bottom of fluted pie pan. Make sure the sides are even. Use a small cake pan or a flat-bottomed glass to press the mixture down and compress it.
  5. Place the pie pan on the baking sheet and bake the breadcrumb crust for 10 minutes. Let cool.
  6. Prepare the filling: Meanwhile, whisk together the sweetened condensed milk, lime juice, egg yolks and lime zest in a medium bowl. Once the crust has cooled, pour the filling into the crust and smooth the surface with a small angled spatula.
  7. Return the pie to the oven and bake for 25 minutes. Remove from the oven and let cool completely to room temperature. Then transfer the pie to the fridge to chill overnight.
  8. Make the whipped cream: Place the whipped cream in the bowl of a stand mixer and transfer to the fridge to chill for 20 minutes.
  9. Meanwhile, place 1 1⁄2 tablespoons of water in the microwaveable bowl. Sprinkle the gelatin over it and leave for 5 minutes. Heat the mixture in the microwave for 10 seconds or until dissolved.
  10. Take the mixer bowl out of the fridge and add the icing sugar. Place the bowl on the stand mixer fitted with the whisk attachment. Whip on high speed until soft peaks form.
  11. Turn the mixer to low speed and slowly add the liquid gelatin. Return the mixer to high speed and whip the cream until it forms stiff peaks.
  12. Fill a piping bag fitted with a nozzle no. 863 with the stabilized whipped cream and pipe small puffs along the edge of the lime pie of different sizes, to create a border.

His first book How to make a cake came out in 2017 with HarperCollins and focused on new fondant cakes – that’s what Gampp built its platform on, but as it and its fans evolved (don’t worry, she always does fondant-covered magic), she wanted to produce something different and special.
