A new cooking school in Escondido is helping people feel at home in the kitchen while having fun.
North County Cooking Classes are run by Charles Heineke, better known as “Chef Charlie”, a local chef with over 40 years of experience in the San Diego area.
“I tell people to be prepared to have fun, eat well, make new friends and learn a lot,” Heineke said. “At the end of the night, I see all the people working together.”
Born in National City, Heineke spent decades cooking in hotels and restaurants across San Diego County. He also discovered that he enjoyed teaching others how to cook, including at Mesa College Culinary School and, for 15 years, at Poway Adult School.
In 2010, he started his own catering and food delivery business, Charlie’s Classic Cooking, preparing and delivering healthy, high-quality meals that could be ready in just five minutes.
Eventually, Heineke said, it couldn’t keep up with larger competitors and decided to end its door-to-door delivery services. He still provides catering services, but has made cooking school another branch of his business.
Using its commercial kitchen in Escondido, Heineke offers three-hour themed cooking classes for children, adults and couples.
From classes in cake decorating and how to host Thanksgiving dinner, to “101 ways to use a rotisserie chicken,” Heineke said his school welcomes all chefs-in-training, regardless of experience or background. absence.
Attitude is often the most important ingredient.
“People are having such a good time. They smile and they understand,” Heineke said, “They tell me, ‘This (kitchen) is not difficult’ and that is my greatest joy. They come to have fun and the by-product is that they learn to cook.
