Yes, you read that title correctly – an Easter chocolate mayo cake does exist. The culprit of this ungodly cake? Heinz. According to them, mayonnaise is the best-kept baking secret that allows you to get a perfectly decadent cake every time. But we’ll let you be the judge.
Before the baking aficionados come to us with pitchforks, listen to Heinz.
In a baking hack from almost a century ago, you know, around the time of the Great Depression, mayonnaise was used in recipes to help elevate any cake by providing a “delicious moistness” ( their words, not mine). Apparently, mayonnaise can offset acidity and create a sweetness that enhances the flavor of any cake.
Sure, there will be plenty of chocolate cakes this Easter long weekend, but do any of them contain mayonnaise? I did not mean it.
It might not be your cup of tea, but hey, don’t knock it down until you’ve tried it, right? I have to admit the cake looks delicious so maybe Heinz is onto something?
So it’s time to take out your Heinz Seriously Good Mayo and get cooking.
Heinz Seriously Good Chocolate Mayonnaise Cake
Ingredients:
- ¼ cup cocoa
- 1 cup hot water
- 1 tablespoon of vanilla essence
- 2 cups flour
- 2 teaspoons baking soda
- 1 cup caster sugar
- ¾ cup Heinz [Seriously] Good Mayonnaise
Method:
- Preheat the oven to 180°C. Mix cocoa, hot water and vanilla essence in a pitcher and wait for it to cool.
- Sift the flour, baking soda and sugar into a bowl and make a well in the centre.
- Combine the Heinz [Seriously] Good Mayonnaise with the cocoa mixture then pour into the well of dry ingredients. Mix gently.
- Pour the mixture into a well-buttered and lined 20 cm round cake tin.
- Bake for 35 to 40 minutes or until the cake is done. Cool in pan for 10 minutes before unmolding onto a cake rack.
- Once cooled, frost with your favorite chocolate icing and Easter decorations!
There you have it, probably one of the most interesting cakes you will see at Easter.
Who would have thought that mayonnaise in a chocolate cake could be so good?
